Distillery Botanica, a new premium Australian artisan gin created by award winning distiller Philip Moore (Mr Black) has officially launched.

Moore, together with co-founders Frank Bethel and Will Miles set out to create a gin that evokes the essence of the Australian summer garden. To achieve this, the spirit is produced via ‘enfleurage’, a thousand-year-old French technique favoured by perfumers. The technique allows Moore to extract untainted perfume from quintessentially Australian ingredients such as the Murraya flower, to create the spirits’ distinct flavour.

“The method captures ingredients as purely as possible, without the use of heat, and makes the delicate Murraya come alive” says Moore.

According to Moore, the gin displays cues of jasmine, honeysuckle and orange blossom; the essence of a fresh Australian summer garden.

To celebrate the launch of Distillery Botanica gin, World Class Bartender of The Year winner and co-owner of Sydney’s Bulletin Place and Dead Ringer Tim Phillips, has created ‘The Garden Martini’, a bespoke cocktail inspired by its garden grown origin and botanical components.

The cocktail combines Distillery Botanica gin, vermouth and benedictine, served with three drops of herb and olive oil to represent the olives traditionally served. The glass is then sprayed with a Murraya perfume.

“The garden is our muse, we see what is growing and form ideas from that. It is a really natural process,” says Miles.

“There will be variations as to what botanicals we might use, depending on what is growing. The flavour will stay consistent but those with a serious nose might pick up subtle variations.”

The Distillery Botanica Garden Martini is available exclusively at Dead Ringer, Surry Hills for Summer.
