'It's Crunch Time' is the timely theme of the 42nd annual Australian Institute of Food Science and Technology (AIFST) Convention to be held at the Brisbane Convention and Exhibition Centre, from July 13 to 16.
With challenges mounting for the food industry, not the least being production downturns from devastated environments and the global financial crisis, there is no doubt it is now 'Crunch Time' for all involved. While hospitality traditionally rides a recessionary downturn better than other industries, success now will depend on driving efficiencies in conversion of our natural raw materials into nutritious healthy and economic foods for the consumer.
The AIFST Convention program is filled with presentations by international industry leaders, designed to help delegates recognise and adapt to the local and global changes. Subjects include sustainability in food production, new technologies, food safety, business outlook/financial stability, nanotechnology, environmental impact on food and product innovation and trends.
The Convention offers attendees improved business knowledge and updated technical tools, support systems and contacts to assist in meeting these 'crunching' issues. Additionally, satellite workshops will be conducted on 16 July for topics such as new product development, consumer research and food allergen management.
