The chef and restaurateur behind some of Sydney's most popular Vietnamese dining spots has announced he's planning to launch his third venture, this time a restaurant-style eatery in a food court in the city's CBD.
Minh Nguyen of Surry Hills' Xage restaurant is keeping details close to his chest about the new venture but said it would feature quality restaurant standard Vietnamese take-out and made-to-order foods in a premium food court environment.
The move will be the third venture by the Vietnam-born chef after a successful year at the helm of the successful Xage which launched December 2009.
With his partner Nui, Nguyen is also founder of Summerrolls, Sydney's first Vietnamese salad bar focusing on street food, which launched in 2007 in the Foodbase on Park food court on the corner of Park and Elizabeth Streets.
"Xage has been so wildly popular that we get many requests for us to open elsewhere in Sydney," Nguyen said.
"However, we still have many more great recipes and interesting ideas to share that it would be a shame not to create something totally new and yet to be seen in Sydney."
The new venture, expected to open in October, will signal a return for chef Nguyen to Vietnamese street food fares with more focus on simple noodle soups and grills.
"It will be something different," Nguyen said. "An award-winning design studio has been appointed to do the design work to complement our vision for the food."
